Start by stirring in a small amount of sugar, honey, or brown sugar. Add only a little at a time, then taste before adding more. This helps soften the strong vinegar flavor without making the chutney too sweet.
If you have extra fruit, mix in chopped apples, pears, mangoes, or dried fruit like raisins. These ingredients add natural sweetness and help create a better balance. Let the chutney simmer for another 10 to 20 minutes so the flavors blend together.
You can also add a pinch of salt. It will not remove the vinegar, but it can make the overall taste smoother. If the chutney is still very sharp, try making another small batch without vinegar and mix the two together.
Remember that fresh chutney often tastes stronger than it will later. After cooling, store it in the fridge for a day or two and taste it again. The flavors usually mellow with time, giving you a richer and more balanced chutney that is much more enjoyable to eat.
